well I wasn't going for the cooling effect more just the preservation - i.e. some kind of cheap to manufacture gas that can surround the meat in contained environment such that bacteria can't grow etc.

Unlike fruit and veg Sam, meat improves by hanging for a few weeks to let it mature. By the time its arrived from NZ its probably just about perfect. I dont eat much lamb though, I much prefer beef and venison :)
